Avocado Grilled Cheese

Happy 2015! Nothing rings in the New Year like the sandwich that never goes out of style. Acting as both guest and caterer this holiday season, this dish emerged as my new favorite—lunch to warm you up on a bleak winter day or doubling as finger-food appetizers at a party. In either scenario, this panini proves a hit! The avocado and mustard are quite the dynamic duo, and I recommend a sharp cheddar for some perfect gooey cheese action.

Avocado Grilled Cheese

Ingredients
  • Grainy, rustic mustard
  • Panini bread
  • Sharp cheddar cheese
  • Sliced avocado
  • Olive oil
Instructions
  1. Heat the panini press (or griddle) on high
  2. Coat one side of each slice of bread with olive oil
  3. Smear a dab of mustard on one side of one of the slices (the non-oiled side)
  4. Place 2-3 pieces of cheddar and avocado between the bread
  5. Toast for 1-2 minutes or until browned
  6. Cut in half & serve warm
